What's the ideal length of prosthetic sock?

Choosing the correct length is a matter of preference.  Some prosthetic components will require a shorter sock that ends just above your prosthetic trimelines.  The general rule is 2-3 inches above the middle of your knee cap for sock length.  Measure the length from the end of your limb to 2-3 inches past the middle of your knee cap.
